Yogurt Panna Cotta

There is something tempting in this recipe. I can’t decide, if it is blueberry, honey or yogurt. They are all my favourite. This light desert is perfect for anyone on diet because is yummy, healthy and with so little calories. Do not worry about getting fresh blueberries. If there is none in your local supermarket try to get frozen or even use other fruit. This desert does really well too with raspberries and apricot. Just have it a shot. So here we go, it is your time now to shine and impress.

You will need:

  • 1 ¼ cup of almond milk
  • 2 teaspoons gelatine
  • 1 teaspoon vanilla sugar or vanilla flavour
  • 4,5 spoons of honey
  • 2 cups of Greek yogurt
  • 1 cup of fresh blueberries
  • 2 spoons of water

Directions:

In the small bowl sprinkle gelatin over ¼ cup of almond milk. Leave it on the side for around 10 minutes. Gallatin should nicely absorb all the milk and will be ready for our desert.

– In the bigger saucepan bring 1 cup of almond milk to shimmer. Add vanilla sugar (optional vanilla bean) and 2,5 spoons of honey. Keep stirring until honey is nicely dissolved. When that is done, take saucepan of the heat and set it aside. Remove vanilla bean.

– add previously prepared gelatine to the milk and stir until gelatine is melted.

–  Wisk in Greek yogurt until well blended.

– pour the mixture into glass cups of your choice. Fill in only around ¾ of cup to leave some room for fruit mixture.

– Prepared mixture put into the fridge for 3-4 hours or overnight.

– Meanwhile, in the small saucepan simmer two spoons of water, two spoons of honey and fruits of your choice. Keep it on small heat for about 5 minutes. After that, take it of the heat and leave to cool down. When cold add it on top of your yogurt mixture.
