Summer Berry Tart
Berry Tart- buttery tart, light mascarpone cream topped with berries- a holiday classic!

Berries, all of them, are the biggest love of my life. They are delicious, light and have a taste of summer. Barry picking is a tradition in my family. We picked a sunny summer day, my mom would give each of us a basket and we begun berry hunt.
Variety of berries in our garden made it fun for everyone. There were all; blueberries, strawberries, raspberries, redcurrant, blackcurrant, yellow currant, even gooseberries.
With baskets full of goods, we were returning them to my mom and then all, the magic begun.
In the kitchen mom would magically create masterpieces.
Later on sitting in trees shadow, we ate them, licking fingers. So good….
Light berry tart is my favourite. Mom allowed me to help with making it. It was special and it didn’t have to be perfect. In the matter of minutes, all of it was gone, straight into bellies.

Ingredients;
Tart
- 1,5 cup of flour
- ½ cup of icing sugar
- 125 g of butter
- 2 large eggs
- 1 tablespoon of milk
Mascarpone cream
- 250 g of mascarpone
- ½ cup of icing sugar
- 2 tablespoons of greek yoghurt
- Vanilla extract
Topping
– Variety of berries
– 1 tablespoon of icing sugar to sprinkle the top of tart
Directions;
- Mix icing sugar with flour in mixing bowl
- Add butter cut into small cubes. Using your hands work mixture until all the crumbs are gone and mixture is smooth
- Add eggs and milk. Mix. Cover mixing bowl with plate and put to the fridge for 1 hour.
- Preheat oven to 350F
- After 1 hour sprinkle table top with some flour and roll dough until 1 inch
- Pick baking pan of your choice and cover it with butter. Sprinkle with flour. Fill prepared baking pan with dough.
- Bake your tart for 20 minutes or until gold. Remove from oven and leave on side to cool down.
- In other mixing bowl mix together mascarpone, yoghurt and icing sugar. Using electric beater makes it fluffy and light. At the end of beating, add vanilla extract.
- Place ready mascarpone filling into your tart. Place berries of your choice on top creating your own masterpiece.
I have to worn you. It is addictive and you will end up making this tart every week or even often. If happens, make it lighter. Use less icing sugar and add more fruits of your choice. To add sweetness to your tart you may sprinkle top of it with fresh honey.
