Spring strawberry salad

Ingredients:
- ¾ cup of quinoa
- 1 lemon zest
- 1 tablespoon of olive oil
- 1 cup of cottage cheese or goat cheese
- 3cups of lettuce
- Handful of fresh mint leaves
- 1cup of strawberries
Dressing;
- 3 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of honey
Preparation;
- Cook quinoa according to the instructions on the bag.
- When quinoa is ready, drain water add lemon zest, olive oil and mix it together.
- In medium saucepan boil water and cook asparagus for two minutes. Drain water and wash asparagus with icy cold water- it will preserve its colour.
- Add the asparagus to your quinoa.
- If you are using cottage cheese drain all the liquid from it first and only then add it to your quinoa. Mix everything together.
- Wash your lettuce and arrange it on a plate. Place mint leaves on the top of the lettuce and then quinoa and strawberries (cut them in half or into smaller pieces)
- In a mixing bowl mix all dressing ingredients and pour it on the top of your salad
