Spicy Curry Prawns

Ingredients;
- 2 ½ cup prawns
- 2 ½ cup chicken stock
- 1 onion, sliced
- 3 garlic cloves, peeled and crushed
- 1 cup basmati rice
- 1 tsp curry powder
- 1 bay leave
- Pinch of cinnamon
- Pinch of cardamom
- ½ cup frozen peas
- 1 lemon juice
- Fresh parsley and coriander
- 1 tbsp almond flakes
- Salt and pepper for seasoning
- 1 tsp coconut oil or olive oil
Directions;
- Prepare vegetables. Peel onion and garlic. Chop onion and crush garlic cloves.
- Heat up frying pan with coconut oil and cook onion on medium heat for 8-10 minutes. Keep steering. Add garlic and curry powder. A drop of water is ok when onion starts burning.
- Add the rice, bay leaves, pinch of cinnamon, cardamom, salt. Add prawns and chicken stock (vegetable stock is fine too). On medium or small heat cook covered for additional 10-15 minutes.
- At the end of cooking, add peas. Cover and cook for another 4-5 minutes.
- Just before serving squeeze in lemon juice, add parsley and coriander. Decorate with almond flakes.
