SMOKED FISH SPRING SCRAMBLE EGGS
Is it a breakfast, is it a dinner or just late supper? Who knows? The fact is this is light and delicious meal, ideal for any time of the day. We are just approaching spring season and the perfect way to celebrate it is to take the best out of it.
Fresh veggies and smoked fish. Yummy, light and healthy.
You can easily serve this dish during Easter celebrations. What is even better is a fact that you need just few minutes to prep and cook it.
You can use any kind of smoked fish for that recipe. My choice this time is smoked haddock. I am living on a seaside so it is very easy for me to put my hands on freshly smoked, juicy fish.
I am a big fan of easy, quick and recipes that require just few ingredients. This could be a breakfast or a lunch dish you would like to impress everyone with and a great thing is that you cannot mess it up. It is so easy that anyone can do it.
Before you start cooking prepare all of your ingredients so it’s easier later. Wash your veggies.
Ingredients;
- 2 eggs
- 1 spoon of milk
- 1 tablespoon butter
- 2 oz of smoked fish- salmon, haddock, trout
- Handful of mange tout
- 2 tablespoons of chopped green onion
- Salt
- Pepper
Method;
- Crack eggs into mixing bowl and whisk them with milk and salt. Eggs should be light and foamy
- Heat up small pan. Put one spoon of butter. Pour in the eggs and using spatula stir them. On the end of cooking add smoked salmon. Keep on small heat for a moment.
- Remove from heat and add peas plus freshly chopped green onion. Put on plate. At the end sprinkle with pepper and salt.
Have a nice breakfast.
