SKINNY DEVILED EASTER EGG CHICKS

It is this time of the year again when you will be chasing rabbits and hunt the eggs in the garden. Easter. Probably my least favourite holidays because it is too much chocolate everywhere. Even if you will try to keep it to the minimum they are just staring at you from everywhere. Like they are hunting you.

 

You might think Easter is quite safe when it come to putting extra weight on. It is not so festive like Christmas. No, it is not but I think chocolate makes it actually worse. One small chocolate egg here and there and before you know it, boom, few extra pounds. Yes, I am telling you this time of year is tricky. Moreover, you are just few months away from summer.

 

I am trying to cut unhealthy stuff as much as I can. I am not buying any sweets for my kids in markets but instead I bake, so I know what they are eating. In addition, they are always keen to help around in the kitchen.

 

This Easter we are going to have deviled egg chicks. My kids are going to make them. It is easy and fun to prepare. Don’t worry about mess in the kitchen. That’s why we cook, to get messy and have fun.

 

In this recipe I have switched mayonnaise for Greek natural yogurt to make it lighter and healthier.

Ingredients;

 

  • 7 hard-boiled eggs
  • 1,5 tablespoon of Greek natural yogurt
  • Pinch of salt
  • 1 teaspoon of yellow mustard
  • 1 carrot, julienne
  • 14papercorns

Directions;

 

  • cook your eggs for 6 minutes
  • peel skin from carrot, wash it and cut into thick slices
  • boil water in small saucepan and cook your cut carrot so it is julienne
  • remove skins from eggs and cut small piece of top of each one
  • gently remove egg yolk and place it in the mixing bowl
  • now cut thin slice of egg bottom so it will be easier to make your chicks stand
  • into the mixing bowl add mustard, pinch of salt and natural yogurt
  • mix together until really smooth
  • put ready mixture into piping bag and pipe into the eggs. Make sure there is some of it sticking on the top – that will be chicks head
  • gently place top of the egg pressing it slightly back so it looks like the chick is about to hack
  • Prepare your carrots. Take one carrot ring and cut it into thin slices. That is going to be chicks legs
  • ready legs put into right place. Then one tiny peace as a chicks face. Using tweezers or your fingers put peppercorns as chicks eyes

Ingredients
