SKINNY AVOCADO DEVILED EGGS

It is his time of year again. Oh, how much I love spring time. To get outside, take deep, deep breath of fresh spring air. Amazing. I am buzzing with energy right now.

 

There is another reason. Easter is coming. Yey, so soon.  For me it will be all about relaxing and spending quality time with my family. Moreover, this year it is even more special, as we are going to have lovely guests coming to visit as. Can’t wait.

I am not leaving anything for a last minute so today I was testing one of recipe for Easter eggs – Avocado devilled eggs. Because I really like to make them as healthy as possible of course I made a few changes to the recipe.

 

First, I have ditched mayonnaise completely from my recipe and have replaced it with natural Greek yogurt. That way my egg filing is lighter, healthier and still extremely delicious. I think I will stick to that swap for good now.

 

Secondly, I have added many herbs. My recipe includes fresh basil, parsley and chives. All chopped and mixed with avocado and yogurt.

 

Third and the last change – almost none salt at all. It was risky move but all that herbs inside made texture rich and taste heavenly.

 

As you can see, this is as light as it can be. I do not believe you can find any lighter version of avocado deviled eggs anywhere. If you will, please share with me so I could try it and improve my version.

Here are my skinny avocado deviled eggs:

 

Ingredients;

  • 10 eggs
  • Half of avocado
  • 3 tablespoons of Greek natural yogurt
  • 3 tablespoons of chopped parsley, basil, chive mixed
  • Lemon juice from half fresh lemon
  • Pinch of salt

Directions:

  • In a pot boil water and then cook your eggs until they are hard boiled
  • Remove from water, peel skin and cut eggs in half
  • Remove egg yolk into mixing bowl
  • Cut avocado in half and put half of it into eggs. Add also juice of half lemon and your chopped herbs. Greek natural yogurt goes last
  • Mix everything together, taste and if necessary add some salt
  • Now gently, using teaspoons put some filling into whites and sprinkle everything with some freshly chopped herbs.
