Roasted Potatoes With Chicken and Peas
Ingredients
1kg baby potatoes
1kg chicken breast – cubed
1 cup peas fresh Mangetout
1 cup baby peas
3 garlic cloves washed
Chicken spices of your choice
Olive oil
Directions:
Wash chicken breasts. Dry them with paper towels and chop into cubes. Put these cubes into mixing bowl, sprinkle with chicken seasoning and garlic. Add 1 tbsp of olive oil and mix altogether.
Meanwhile, boil lightly salted water and cook cubed potatoes for 10 minutes. Then, drain water from them. Season potatoes with salt, pepper and sprinkle with 1 tbsp olive oil.
Place baking paper on a baking tray and put potatoes on it, evenly. Then, place chicken next to potatoes (on the same paper) and bake in oven for approximately 30 minutes. After 30 minutes, you can turn the chicken and potatoes over so they are roasted equally.
Remove from oven when potatoes turn golden brown and add peas
