Raspberry Tart With Mascarpone And Jelly


I know June’s favorite are strawberries, but for me now are raspberries. I love them for their sweetness, tenderness, color, smell and the most for what they do for my body.


Except for nearly zero calories, they are full of water, fiber, nutrients- translate this- amazing for weight loss and remaining healthy body, glowing skin, shiny hair, great metabolism booster, healthy and happy guts, light body. Yes, yes and yes, almost miracle workers.


Because I did not baked anything in really long time ( nearly 3 months) I picked this lovely Sunday dessert. It is lighter than most of cakes, cookies, desserts you know.


Easy and quick in preparation. Have a look and decide yourself.


Raspberry tart with Mascarpone and Jelly




For base;


  • 3 cups of flour
  • 4 eggs yolks
  • 1 tsp of baking powder
  • 200 g soft butter
  • 2 tbsp double cream
  • 1 cup of icing sugar


Directions for base;


  • Start by preparing baking tray and for that amount of ingredients, you may take bigger one. Cover every inch of it with thin layer of butter (take some butter on baking paper and cover all surface with it). Then take one tbsp of flour and sprinkle all inside of baking tray. All the extras remove.
  • Preheat oven
  • In mixing bowl (or food processor) mix together soft butter and icing sugar until mass will become soft, puffy and creamy texture.
  • Still strolling add one spoon at the time of flour and eggs.
  • On the end, add baking powder and cream. When it gets thicker use your hands to mix it together.
  • Ready mixture roll so its thin and prepared like that place in baking trey. Use fork and make small holes so your base is baked evenly.
  • Bake for 10 minutes




Meanwhile prepare mascarpone cream;




  • 250 g mascarpone cheese
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar or 2 tbsp of honey
  • 1 tsp lemon juice


Directions for mascarpone cream;


Either with spoon or food mixer mix all ingredients and gently mix them together. If you are using food mixer (processor) do it carefully as mascarpone may go too hard to quick. If you will decide to go with food mixer- processor, your mass will be lighter and creamier.


Other ingredients;


  • For jelly, you prepare raspberry jelly according to instructions on package.
  • You need 2 or 3 jelly’s
  • 4 cups of fresh raspberries (the more the merrier)



– After you base is baked you will have to wait until is cool.

– On cold base place evenly mascarpone cream

– spread raspberries on the top of that and cover with jelly

– put in the fridge until jelly hardens
