This time I was lucky and managed to put my hands on fresh mint, raspberries, lemons and some honey straight from beekeeper. What a treat!
I am going to use all of these to create sweet dessert for kids this weekend and it will be a Non Bake Raspberry Lemonade Cheesecake.

Ingredients;
Crust;
- ¾ cup of crushed digestive biscuits
- 3 tablespoons of honey
Filling;
– 5 tablespoons of honey
– Zest of 2 lemons / limes
– 8 ounces of cream cheese
– 2 tablespoons of fresh lemon juice
– 1 cup of fresh raspberries
– ¾ cup of natural Greek yogurt
Directions;
- Prepare glasses in which you are going to serve your dessert
- Crush your biscuits (you can use crackers instead) into crumbs in a mixing bowl. Add honey and mix together.
- Put some of this mixture into each serving glass
- In another mixing bowl whip cream cheese, yogurt until mass is smooth and light. At the end of whipping add lemon juice, honey and lemon zest.
- Once ready put into glasses
- On the top place fresh raspberries
- Decorate with fresh mint
