QUINOA ALMOND SALAD
Every day passes really quickly around my house and there is no time for me to sit down and relax- not during day time anyway.
As a mom I always try to give my family the best quality food in every meal. I am not taking shortcuts. You will not find ready meals or fast food in my kitchen at all and ever. Everything is fresh, nutritious and most importantly quick to make.
Quinoa or “rocks” – like my kids like to call it, is something new to me. I am still experimenting with it but so far, so good.
I am introducing quinoa more often because it contains really high levels of protein and it’s really healthy. Not to mentions it is so easy to prepare, anyone can do it.
This particular salad will be everyone best friend from now on as it is light in texture and flavour. It is also gluten-free.
Mixed with strawberries, blueberries and almonds will give you great source of fibre, vitamins and water.
I am using light dressing for this salad to keep it as low calories as possible.

QUINOA ALMOND SALAD
Ingredients:
– 3/4 cup of dry quinoa
– 2,5 cup of strawberries, sliced
– 1,5 cup of fresh blueberries
– 2 tbsp of honey
– 1 tsp of balsamic vinegar
– 1 tbsp of fresh lemon juice
– 1/2 cup of almonds, chopped
Directions:
- In a medium pot cook quinoa as directed on package.
- Wash all fruits and cut strawberries into thin slices. Place them in large mixing bowl.
- In other bowl mix together balsamic vinegar with honey and lemon juice.
- Drain remaining water from cooked quinoa and add your quinoa to bowl with fruits. Combine. Pour dressing and serve immediately
- It is safe to keep it in fridge for 3 days.
This salad is really light and fresh. Perfect on its own as a lunch idea. Just put into your lunch box and everyone at your work will be jealous and asking you for recipe.
