Mini Fruit Tarts
Mini fruit tartlets. Perfect combination of Light filling, pastry crust and fresh fruit.
Summer food is without a question the most delicious, tasty and pleasurable kind. With friends, family, sun and fresh air everything taste sunny.
We don’t want to spend hours preparing meals and losing all precious time. Summer food should be simple, quick in preparation and two-bite size.
Combine everything that is the best into one delicious finger-licking dessert.
Ingredients;
For pastry
- 1,5 cup of flour
- ½ cup of icing sugar
- 125 g of butter
- 2 large eggs
- 1 tablespoon of milk
For cream
- 250g (9oz or a cup)of mascarpone
- ½ cup of icing sugar
- 2 tablespoons of Greek yogurt
- Vanilla extract
Topping
- ½ cup blackberries
- 2 kiwi
- ½ cup raspberries
- ½ cup of strawberries
Directions;
- Mix icing sugar with flour in mixing bowl
- Add butter cut into small cubes. Using your hands work mixture until all the crumbs are gone and mixture is smooth
- Add eggs and milk. Mix. Cover mixing bowl with plate and put to the fridge for 1 hour.
- Preheat oven to 350F
- After 1 hour sprinkle table top with some flour and roll dough to make it 1 inch Cut circles using big cup or vine glass.
- Pick mini baking treys of your choice and cover it with butter. Sprinkle with flour. Fill prepared baking pan with prepared circles. Make sure whole surface of baking treys is covered with dough.
- Bake your tart for 20 minutes or until gold. Remove from oven and leave on side to cool down.
- In other mixing bowl mix together mascarpone, yogurt and icing sugar. Using electric beater makes it fluffy and light. At the end of beating, add vanilla extract.
- Place ready mascarpone filling into your mini tarts.
- Decorate each tart with fruits of your own combination. You can place any fruit combination for different tart. It is up to you.
- I did covered strawberry and raspberry tarts with some strawberry jelly. You might do that in you want.
