Mango coconut pudding

Have you been drinking smoothes for a while now and are desperate to try something new? Do you have enough of sipping your breakfast through straw? I would like to present you with a mango coconut pudding. It is a breakfast that tastes like a dessert. A pudding for a breakfast?  Why not? Go crazy and bite something like this first thing in the morning.

It got everything you need for a kick-start – protein, fiber, fruits… It will just keep you going for hours.

 

Ingredients;

  • Mango, skinless, cut into small cubes
  • Few mint leaves
  • 2 tablespoons of lime juice
  • 1 tablespoon of coconut flakes
  • Pinch of salt
  • 1 cup of water
  • 1 ½ cup of coconut milk
  • 2 tablespoons of chia seeds
  • 1 cup of brown rice

Directions;

  • Combine milk, water, rice and chia seeds and salt in a saucepan. Cook on medium heat for about 10 minutes and then reduce heat to low and cook for another 10-15 minutes.
  • If necessary, add some more water. When ready take it of the heat and leave it to cool down.
  • Serve with mango cubes, lime juice, mint and coconut leaves.
