Light Strawberry Ricotta Cheesecake
This is my light version of traditional cheesecake, reserved mostly for hot summer days. I truly love it for it light texture, coolness and lack of calories. Yes, you can eat it almost guilt free as there are only few calories in it. It is simple in preparation and looks impressive so you can serve it at any girl’s night in or family gathering.
Ingredients;
- 1 ricotta cheese
- 2 strawberry jellies
- 2 cups of fresh strawberries
- 1 cup of raspberries
- Few fresh mint leaves
Directions;
- Prepare your jellies according to instructions on a package, but slightly reduce amount of water added by ¼.
- When jelly is cool, mix it with ricotta cheese and whip it until mixture is smooth.
- Pour your mixture into baking tray and put into a fridge to get it firm
- When cheese-jelly is ready decorate with fresh strawberries and raspberries
Keep in refrigerator
