Light Orange Salad
Oranges are one of super foods and it doesn’t matter if you eat them fresh as a snack or as part of a meal. Oranges are full of nutritious elements and that is why I love them. This salad was one of my favourite foods while I was at uni. Seriously I can’t remember now who gave me this recipe but I will be forever grateful.
This salad goes really well with any kind of roast and I like it best with oven baked chicken breasts. Because it is really filling you don’t even have to add any rice, bread or potatoes. Just salad will be plenty.
It is so light it will please everyone and it is safe if you are on a diet.
I just want to warn you – YOU WILL GET ADDICTED TO IT.
Ingredients:
- one bag of salad mix
- 2 oranges, peeled and cut into thin slices
- Half cup of walnuts
- 2 tablespoons of orange zest
- 2 tablespoons of honey
- 1 cup of Greek yogurt
Method;
- Wash your salad and remove water with paper towels. Do it gently so salad is intact.
- Cut oranges into thin slices or into any preferred by you sizes.
- Prepare walnuts. They are perfect in any sizes: whole, halves or tiny pieces.
- Put salad into a serving bowl, mix with oranges.
- Mix Greek yogurt with honey and one spoon of orange zest in a mixing bowl.
- Sprinkle yogurt mixture on the top of the salad. Put your walnuts and then rest of orange zest.
