Lactose Free Cottage Cheese Coconut Pancakes
Ingredients;
- 1 cup low fat
cottage cheese
- ½ tbsp of baking soda
- 2 eggs
- 1 tsp of vanilla extract
- Pinch of cinnamon
- Pinch of salt
- ½ cup of coconut – shredded (or coconut flour)
- 1 tsp of honey- optional
- coconut oil for cooking
- fresh fruits for decoration
- Use food blender to make it easier, faster and less messy
- Put all ingredients except decorating fruits and coconut oil
- Blend until smooth
- Heat up frying pan and pour small amount of mixture. Cook until golden brown
- Turn on other side and cook for 30 more seconds
