Lactose Free Cottage Cheese Coconut Pancakes

Ingredients;

 

  • 1 cup low fat cottage cheese
  • ½ tbsp of baking soda
  • 2 eggs
  • 1 tsp of vanilla extract
  • Pinch of cinnamon
  • Pinch of salt
  • ½ cup of coconut – shredded (or coconut flour)
  • 1 tsp of honey- optional

  • coconut oil for cooking
  • fresh fruits for decoration

Directions

 

  • Use food blender to make it easier, faster and less messy
  • Put all ingredients except decorating fruits and coconut oil
  • Blend until smooth
  • Heat up frying pan and pour small amount of mixture. Cook until golden brown
  • Turn on other side and cook for 30 more seconds
