High Protein Bluberry Pancakes
“If I call you darling, will you make me pancakes?”
This is a recipe for a one of the healthiest versions of pancakes. It is perfect because they are high in protein (thanks to cottage cheese) which will feed your muscles nicely. Cottage cheese is also making the pancakes lighter, fluffy and almost creamy.
Your pancakes are much thicker than ordinary ones and blueberries inside make them just wonderful.
I am actually drilling by just thinking about them. If you watch your calories use raw flour instead of plain one.
Serve it with even more blueberries on top. For kids, if they like them sweet a few drops of fresh honey will not do any harm.
Ingredients;
- 1 cup of blueberries
- 1 cup of almond milk
- ½ cup of cottage cheese
- 1 cup of flour
- 1 egg
- Pinch of salt
- Olive oil for cooking
Directions:
- Mix together milk, egg, salt and flour in a mixing bowl. Whip it until smooth so there is no lumps in the mixture
- At the end add cottage cheese and using spoon, mix it in
- Add your blueberries
- Heat up small frying pan, put on just a drop of olive oil
- Pour some mixture and on medium heat cook your pancakes. After 40 seconds, turn your pancake on the other side. Keep on heat for another 20 seconds.
- Serve with fresh blueberries
