Healthy and Delicious Paprika Chicken Pasta
Serves 6
Ingredients;
Sauce;
- 6 paprika
- 5 tomatoes
- 1 onion
- 4 garlic cloves
- 2 cups of water
- Salt
- Pepper
- Handful of fresh basil
- Handful of fresh parsley
Pasta;
- 3 cups of dry pasta
- 5 chicken breast
- ½ cup cheese
Salad;
- 5 handful of salad of your choice
- 1 cup cherry tomatoes
- 1 cup of cucumber
- 3 radishes
- 1 shallot
- Salt
- Pepper
- Salad cress
- 1 tsp lemon juice
Directions;
- cook pasta according to instructions
- drain water and leave on side for moment
- In medium size pot cook together; cut into slices paprika’s, tomatoes, garlic, onion, parsley, basil. Add water and cook for 15 minutes.
- When soft blend all together and leave on side for a moment
- Using paper towels dry up chicken breasts. Cut chicken into small cubes.
- On frying pan cook chicken for few minutes (use one teaspoon of coconut oil or olive oil)
- Preheat oven
- In baking tray mix together pasta with sauce and chicken
- Bake for 10 minutes
- Meanwhile prepare salad; wash and cut salad. Cut tomatoes into smaller peaces, add sliced cucumber and radish. Toss in chopped shallot. Sprinkle with lemon juice and some salad cress.
- When pasta is ready sprinkle top of it with cheese.
