Chili Con Carne
One of the best dishes to serve to friends for a casual get-together
Mexican favourite, chilli con carne is great for families. Make enough to last a while as it tastes even better after a few days.
Ingredients
1 tbsp oil
1 large onion, chopped
1 red pepper, chopped
2 garlic cloves, peeled, chopped
1 tsp paprika
500g lean minced beef
2 tbsp tomato puree
4 tomatoes, skinless
410g can red kidney beans
Salt and pepper
Handful parsley green, chopped
1 lime
Plain boiled long grain rice, to serve
Directions;
Chop onion and garlic. Cook on medium heat with a drop of olive oil until onion will turn golden brown. Around 3 minutes
Add minced beef and cook on medium heat for another 5-10 minutes
Place tomatoes in bowl and cover with boiling water. Tomatoes skin should fall off after 1-2 minutes. If not it will be easy to remove. Skinless tomatoes chopped and put into large pot.
To the same pot, add onion, garlic, beef, and beans. Set on medium heat and cover it up.
Chop parsley greens, paprika and add to pot too. Cook all until beans will get soft.
On the end of cooking, add tomato puree. Season with salt, pepper and optional chili powder.
Serve with cooked rise. You may sprinkle it with limejuice.
