Berry Pavlova – The Perfect Dessert 

 

The perfect combination of crunchy yet gooey meringue, light filling and an endless variety of toppings.

Berry Pavlova

Here we go…the lightest Pavlova dessert you can imagine. Down to minimum with sugar, instead of creamy filling prepared with light, low calorie soft cheese with a touch of lemon and natural, un-sugared wild berries.

 

This is typical summer dessert and it is really popular in my hose. Pavlova is a king on august summer dessert for me.

It takes literally 20 minutes to bake and only few to finish. The only down side is …it disappears to fast, so you may think of baking two at once.

 

Have a look at ingredients and preparation and you will see there is nothing difficult about this one.

Ingredients;

 

  • 6 egg whites
  • Pinch of salt
  • 200 g of sugar ( you can use less)
  • 1 tsp of balsamic vinegar
  • 2,5 tsp of corn flour

 

Filling;

 

  • 400g or more berries (1,5 cup)
  • 250 g soft low fat cheese (I used Philadelphia)
  • 1 tbsp lemon juice
  • OPTIONAL ; 1tbsp of sugar or honey

 

Pavlova…

  • Preheat oven to 160C.
  • Put egg whites into mixing bowl and whisk them until they form stiff peaks. Then in small portion start adding sugar, still whisking.
  • At the end of whisking, add balsamic vinegar, corn flour and pinch of salt.
  • Once that is finished spread them evenly on previously prepared baking tray (use large baking tray and lay it with baking paper- it will be easier to remove ready Pavlova)
  • Bake around 20 minutes
  • After that remove from oven and set on side to cool down
  • Meanwhile in another mixing bowl mix together soft, low fat cheese with lemon juice and sugar.
  • When Pavlova is cold place it upside down and gently remove baking paper.
  • On exposed bottom of your Pavlova spread soft cheese and then fruits of your choice
  • Roll Pavlova gently starting from the edge
  • You may sprinkle it with icing sugar before serving. Decorate with fresh fruits and mint

 

All this will take maximum 30 minutes top. Fill free to use any kind of fruits you wish.
