happy Mother’s Day ladies. This Sunday is our celebration time, when we can relax 😉 , have fun, spend time with loved ones. This is the day when we will be spoiled and appreciated. Let’s have every day like this, starting with right breakfasts. I give you few- but easy and extremely nutritious breakfast options for us- moms. Enjoy.

  1. ALMOND CHIA STRAWBERRY DELIGHT

Ingredients; 

  • 2 tbsp Chia seeds
  • 1/2 cup almond milk
  • 1 cup fresh strawberries
  • some fresh mint
  • 1 tsp honey

Directions; 

  • mix Chia with milk and leave for 10-15 minutes so they can absorb all the liquid- you can leave them overnight
  • blend strawberries, mint and honey together
  • pour Chia mixture on the bottom of glass, strawberry on the top
  • decorate with few fresh strawberries

2. STRAWBERRY MANGO MINT PUDDING

Ingredients; 

  • 1 cup fresh strawberries
  • 1/2 mango-skinless and cubed
  • fresh mint
  • 1/2 cup of fresh yogurt
  • 1/2 cup cottage cheese
  • 1 tbsp honey

Directions; 

  • simply blend all ingredients together until smooth.
  • decorate with fresh strawberries and mint

3. MIXED FRUITS MASCARPONE DELIGHT

Ingredients; 

  • 1 cup natural yogurt
  • 1/2 cup mascarpone cheese
  • 2 tbsp honey
  • 1 tsp lemon juice
  • fruit mixture

Directions; 

  • whip together mascarpone, yogurt, honey and lemon juice until all ingredients are mixed well together and thick but creamy
  • pour it into glasses and decorate with fruit mixture of your choice
  • keep in fridge

4. FROZEN VANILLA YOGURT WITH STRAWBERRIES

Ingredients; 

  • 1 cup natural yogurt
  • 2 tbsp icing sugar – or honey if you prefer
  • 1 cup fresh strawberries

Directions; 

  • whip yogurt with icing sugar until yogurt becomes creamy and thicker
  • pour it into glasses and put into fridge for 15-20 minutes (there is no conservants in it so leaving it to long in the fridge will make it ice hard)
  • before serving decorate with fresh strawberries and sprinkle with some icing sugar

 

 

5. STRAWBERRY SANDWICH

Ingredients; 

  • 2 slices rye bread
  • 2 tbsp soft low fat cheese
  • 1 cup of fresh strawberries
  • 1 tbsp of honey

Directions; 

  • spread soft cheese on bread
  • slice strawberries and place them on the top of bread
  • sprinkle with some honey
  • optional add some fresh mint 😉
