Quick and easy recipe, for healthy breakfast or brunch. Ideal for healthy eaters, new moms or anyone who is trying to loose some weight. It is balanced with protein, carbs and good-fats. All you need for a good start of the day.

 

It is beautiful sunny spring morning in here, and I am planning to spend it outdoor with my family. It is school holidays (Easter brake/spring brake) and my little angels are home. I think we will go for a long bike ride and later on maybe we will draw something with chock on pavement.

My kids love toasted bread and eggs on it. I am adding some avocado today with some greens to make this meal more nutritious. You know what- they loved it. My daughter has licked her plate when she finished her toast. Trust me, plate-licking equals super tasty with no words.

Ingredients;

  • half of avocado
  • 2 slices of whole grain bread, toasted
  • 2 poached eggs
  • ½ lime juiced
  • 1 teaspoon garlic minced
  • 1 teaspoon chives
  • Salt, pepper
  • cherry tomatoes

 

When bread is toasted, spread half of avocado mixed with limejuice on it and place two previously poached eggs. Sprinkle with some salt and pepper. Add chopped chives on the top.
